Jollof Rice With Chopped Fish And Seafood

  • ½ Onion, sliced
  • Oil
  • 1 clove garlic, chopped
  • 2 chillies, halved
  • KNORR chicken cubes, crumbled
  • Medium curry
  • Ground cumin
  • Ground coriander
  • Paprika
  • Peri peri spice
  • Basmati rice
  • Firm white fish, cut in cubes
  • Seafood mix
  • Water
  • Prawns
  • 2 tomatoes, chopped
  • Fresh coriander, chopped

  1. In a large pan, fry the onion and garlic until lightly browned.

  2. Add the chillies, and all the spices and fry for 2 minutes.

  3. Add the cut-up fish and the seafood mix, stir well to coat with spices, then add the rice and water.

  4. Bring to the boil, then turn down the heat and simmer for 20 minutes, stirring occasionally.

  5. Add the chopped tomato and prawns and simmer for 3 – 5 minutes.

  6. Stir in the chopped coriander and serve.
