Coconut Chicken with Asian vegetables
Knorr’s coconut chicken has just the right amount of flavour. Serve with jasmine rice for an extra fragranced dish.

Ingredients
- KNORR chicken stock 24g
- Fresh thyme 10ml
- Water 125g 125ml
- Vegetable oil 15g 15ml
- 8 Chicken pieces 600g
- Black pepper ground 5ml
- 2 onions 320g
- 1 ½ carrots 100g
- Spinach 100g
- 1 clove garlic 5ml
- Ginger, grated 5ml
- 2 green chillies 10ml
- Curry powder 15ml
- Tomato paste 36g 30ml
- Green beans 100g 15ml
- 1 tin coconut milk 400g

Prep all the vegetables

Brown chicken pieces in oil and add onions.

Fry for a few minutes.

Add remaining ingredients except fresh green beans and simmer for 30-40 minutes.

Add green beans 5 minutes before end of the cooking time.

Serve with jasmine rice and sprinkle with fresh coriander leaves.
