When I’m cooking a roast for family and friends, I always like to cook plenty of vegetables, from Roast Potatoes to Savoy Cabbage with Bacon, Carrots and Celeriac; I don’t worry about having leftover veg because I know I can always use them to make one of these three:
- Bubble and Squeak
- Colcannon
- A tasty soup
