  • 400 g. thick rice noodles
  • water, to cover
  • 2 tbsp oil
  • 1 tbsp annatto seeds (achuete)
  • 4 cloves garlic, chopped
  • 4 tbsp flour
  • 4 cups water
  • 1 pc. Knorr Shrimp Cube
  • 1 pc. Knorr Pork Cube
  • ¼ kg. pork belly, sliced into strips
  • ¼ kg. shrimp, shelled and deveined (reserve shrimp heads for sauce base)
  • ¼ kg. squid, sliced into rings
  • fish sauce, to taste
  • ground black pepper, to taste
  • calamansi, to serve
  • Toppings (optional): chopped spring onions, crushed chicharon, tinapa flakes, fried tofu cubes

Pancit Malabon Recipe
  1. Begin by boiling water in a pot then drop the noodles in. Simmer for at least 5 minutes or check if the noodles are al dente. The noodles should still be firm to the touch. Remove the noodles then drain.

  2. Next, grab a pan and place the achuete and oil together. By allowing the seeds and oil to sizzle, you’re extracting the color. Once the seeds turn dark in color, remove and discard them. We now have the achuete oil ready.

  3. Now, in a large pan over medium heat, throwing in the garlic and sauté them until brown. Add the flour then mix it well, cooking it over low heat until you get a thick paste and it gives off a nutty aroma.

  4. Slowly pour the water and shrimp heads. Bring these to a boil before adding the Knorr Shrimp Cube and Knorr Pork Cube. After it has simmered for 6-8 minutes, remove shrimp heads.

  5. Gently place the pork belly, shrimp, and squid and allow to simmer until cooked through. Taste and check the seasoning.

  6. Now comes the exciting part: the plating! Place the noodles in a serving platter, pour the sauce over and arrange the meat and seafood on top. And there you have it! This is cooked with so much love and effort. Your family will adore you for it!
