Roast Gammon With Orange, Chilli And Honey Glaze

Here’s a recipe for pork lovers. The orange, chilli and honey, add extra depth to the meat’s flavour.

  • Whole Gammon, boneless and boiled
  • KNORR chicken cubes, crumbled
  • Vinegar
  • Brown sugar
  • Cayenne pepper
  • Coarse black pepper
  • Crushed chilli flakes
  • Honey
  • 1 orange – zest and juice
  • 4 cloves for glaze
  • 20 cloves for studding

  1. Preheat the oven to 200 degrees Celsius.

  2. Place the vinegar, brown sugar, orange zest and juice, cayenne pepper, black pepper, crushed chilli flakes, curled KNORR cubes, honey and 4 cloves in a pan, bring to the boil and reduce by half.

  3. To prepare the boiled gammon for roasting, reel back and remove the rind.

  4. Score the fat and flesh to make diamonds and place a clove in every alternate diamond.

  5. Glaze the gammon and roast until the glaze is caramelised. Keep applying as needed.

  6. Serve with potatoes and vegetable or salads.
