  • 1 onion finely diced
  • 2 carrots finely diced
  • 2 stalks celery diced
  • 1 sweet potato, peeled diced
  • 4 garlic cloves, minced
  • 1.5 cups frozen green beans
  • 3/4 cup barley
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tin chopped tomato
  • 2 Knorr Vegetable Stock Pot diluted in 2 litres water
  • large handful of flat leaf parsley
  • salt & black peppper

  1. Combine all of the ingredients, except for the parsley, in your slow cooker.

  2. Cook on low until the barley is tender, about 8 hours.

  3. Stir in the parsley, serve and enjoy.
