  • 2 Knorr Chicken Stock Pot diluted in 2 litres of water
  • 2 leftover chicken legs shredded
  • 1/4 carrot, peeled & spiralized
  • 1/2 sweet potato. peeled & spiralized
  • 2 large courgettes, spiralized
  • large handful coriander, to serve

  1. Bring the stock to the boil and add the noodles.

  2. Cook for the time allocated on the noodle packet.

  3. Once the noodles are cooked, tear the chicken away from the bones, add into the broth with the carrot and sweet potato and simmer for a further 5 minutes.

  4. Turn off the hob, add the courgette and leave to stand for 3-5 minutes with the lid on.

  5. Garnish with coriander and enjoy.
