Every Filipino household has a sinigang na baboy recipe they cherish. Techniques and ingredients vary for every home cook. Some go heavy on the veggies, adding everything from kangkong to talong until the meat seems almost like an afterthought. Others use different kinds of protein in a single pot – beef ribs, pork belly, and shrimp. For souring agents, sampalok is classic; but over time, sinigang fans have learned to keep it interesting with pakwan, kamias, unripe mangga, and so on.
This sinigang sa gata recipe hails from the same spirit of innovation. It combines the sour, savory flavors of the classic ulam with the creamy richness of ginataang gulay. Coconut may not be the most obvious addition to your list of sinigang na baboy ingredients, but it’s worth the try, especially if your family loves anything with gata. At the very least, they’ll love the surprising twist. At most, this recipe might even surpass their current favorite.
