People say Hainanese Chicken gets its flavour from the dipping sauce that is served alongside it because the chicken itself has a bland taste. This recipe proves it to be otherwise. You just need to follow these simple steps to have the most wonderful Hainanese chicken at home.
Begin by preparing the components to flavour the chicken. In a blender, combine half of the rice wine, light soy sauce, half of the ginger and spring onions. Process this into a puree and rub this inside the cavity of the chicken. If you don’t have a blender, you may use a mortar and pestle. You just need to pound and mash well until all the mixture is well combined. Leave this in the chiller to infuse the flavour.
Prepare a large pot filled with 8 cups of water and bring this to a boil. Throw in Knorr Chicken Cubes and the remaining half of the ginger and spring onions and bring this to a boil until the cubes dissolve. Stir well, turn off the heat, and gently slide the chicken into the pot. Let this stand for 30 minutes while covered.
After 30 minutes, remove the chicken and then bring the stock to a boil again. Turn off the heat then add the chicken back. Let this stand for another 30 minutes while covered.
Remove the chicken and allow it to cool. Reserve the stock and set it aside.
For that added flavour, you need to prepare a rub made with a combination of sesame oil and the remaining light soy sauce. Spread this around the chicken before slicing it into serving pieces. Pour some of the reserved stock to make it more moist.
Bragging rights begin now when you serve this with a side of Bango Kecap Manis, chili sauce, and ginger sauce. It’s a trophy dish waiting to be devoured by your family, especially when you go that extra mile by serving it with chicken rice.
