  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup white onion, fine diced
  • 1/2 tbsp store-bought Italian herb seasoning
  • 800 grams canned dice tomatoes
  • 1 pc Knorr Chicken cube
  • 1 cup water
  • 1/4 cup white wine (optional)
  • 1/4 tsp chilli flakes (optional)
  • sugar, salt and pepper to taste

Chicken Parmigiana:

  • 2 pc whole chicken breast fillet
  • pinch store-bought Italian herb seasoning
  • salt and pepper
  • 1/2 cup all-purpose flour
  • 2 pcs eggs, beaten
  • 1/2 cup Japanese (Panko) breadcrumbs
  • oil for pan-frying
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Tomato Cream Pasta:

  • 1/2 cup all-purpose cream
  • 400 grams cooked spaghetti
  • 1/4 cup grated Parmesan cheese

  1. In a pot, heat olive oil and saute garlic until fragrant and lightly toasted. Add onions and continue to saute for another 2-3 minutes.

  2. Add Italian herb seasoning, canned tomatoes, Knorr Chicken Cube, water, white wine & chili flakes, if adding. Allow to simmer until wine is cooked off. Reduce heat and continue to cook for 20-40 minutes over very low heat, stirring frequently.

  3. Adjust sugar, salt and pepper according to preference. Set aside and keep warm.

  4. To make chicken parmigiana: Slice chicken breast into thin wide pieces. You may pound chicken to achieve preferred thickness. Season both sides of all chicken pieces with Italian Herb Seasoning, salt and pepper. Dredge each pc in flour then into beaten eggs then coat with breadcrumbs until all chicken pieces are breaded. Pan fry in hot oil until golden brown. Once all chicken pieces are cooked, arrange on a serving plate then spoon sauce on the middle part of the chicken cut lets. Sprinkle grated mozzarella then bake in oven or airfryer until cheese melts. Sprinkle grated Parmesan cheese just before serving. Enjoy!

  5. To make Tomato Cream Pasta: Add all-purpose cream to the prepared pasta sauce. Top over cooked pasta and sprinkle Parmesan cheese just before serving. Enjoy!
