Marinade:

  • 5 cloves garlic, peeled, chopped
  • 1 small pc red onion, peeled, chopped
  • 1/2 cup sliced ginger
  • 1 stalk lemongrass (white end), chopped
  • 3 tbsp Knorr chicken powder or 2 pc Knorr Chicken Cube
  • 3 tbsp Knorr Liquid Seasoning
  • 3 tbsp soy sauce
  • 1 tbsp ground black pepper
  • 1 3/4 cup white vinegar
  • 1 cup lemon lime soda
  • 70 grams panutsa
  • 1/4 cup calamansi juice
  • 1 tsp sea salt

Anatto oil:

  • 1 tbsp anatto / atsuete seeds
  • 4 cloves whole garlic, peeled
  • 1/4 cup vegetable oil
  • 1 small pc bay leaf
  • 4 pcs chicken leg quarter
  • 25 grams panutsa, for basting mixture
  • 2 pc whole lemongrass, for brushing

Classic Chicken BBQ Inasal with Smoky Glaze
  1. Prepare the marinade: Combine all marinade ingredients in a bowl. Mix well. Chill covered until ready to use.

  2. Prepare the anatto oil: Place all ingredients in a saucepot over low heat and allow to simmer for 30 minutes. Strain the oil into a container to cool down. Discard the cooked seeds and garlic. Set aside.

  3. Prepare basting mixture: Get ½ cup of the marinade and combine with 25 grams of panutsa. Mix well until combined.

  4. Prepare the lemongrass for brushing by making long incisions along the bottom part of the lemongrass stalks. Trim a small portion of the leaves and tie 2 stalks together. This will serve as a basting brush while cooking the chicken. Set aside.

  5. Marinate the chicken with remaining marinade overnight in the chiller.

  6. To cook: Pre-heat grill over medium heat. Drain chicken from marinade and grill chicken skin side up. Using the lemongrass brush, baste the chicken with the basting mixture alternating with the anatto oil each time you flip the chicken. Grill until fully cooked then serve while warm.
