  • Boneless Chicken Quarter Leg (cut into 1 inch cubes) - 1 kg
  • Pinoy Style Christmas ham [for procurement: Excelente brand boneless ham not sliced, available in Palanca Street, Quiapo] (cut into 1 inch cubes)
  • soy sauce 1/2 - 1 cup
  • vinegar 1/2 - 1 cup
  • pineapple juice 1 - 3 cans
  • fresh pineapple (peeled and eyes removed) as needed
  • cracked black pepper - 1 - 2 tbsp
  • bay leaves - 4 pcs
  • minced garlic - 100 - 200 g
  • Knorr chicken cubes - 1 - 2 pcs
  • Knorr Liquid Seasoning 1 - 2 tbsp
  • sugar as needed
  • crispy garlic for garnish
  • spring onions for garnish
  • Optional: cornstarch

Christmas Adobo Pineapple and Christmas Ham
  1. Heat oil in a pan and brown the chicken. Set aside

  2. In the same pan, sear the cubed ham pieces. Set aside.

  3. In the same pan, add oil if needed and sauce garlic until brown.

  4. Add back the chicken and ham pcs.

  5. Add vinegar, soy sauce, black pepper, and bay leaves, and enough water to cover the meat to around 80%.

  6. Bring to a boil, simmer covered until the chicken is tender. Add water if needed. SImmer for about 20 minutes.

  7. Remove the cover and reduce until you reach the desired consistency. Season to taste."
