Chicken Afritada:

  • 3 tbsp cooking oil
  • 4 cloves garlic, chopped
  • 1 small onion, chopped
  • 1 1/2 lb. chicken, cut into serving pieces
  • 1 8 oz. can tomato sauce
  • 1 1/2 cups water
  • 4 to 5 pcs dried bay leaves
  • 1 pc Knorr chicken cube
  • 1 medium potato, cubed
  • 1 medium carrot, cubed
  • 1 small red bell pepper, sliced
  • 1 small green bell pepper, sliced
  • salt, to taste
  • ground black pepper, to taste

  1. In a pan, heat oil and sauté garlic and onion until softened.

  2. Sear the chicken until lightly browned on both sides.

  3. Add in the tomato sauce, water, bay leaves and let boil.

  4. Add in the Knorr Chicken Cube, stir until dissolved, and cover. Cook on low to medium heat until chicken is tender (around 30 minutes).

  5. Add in the potatoes, carrots, red bell pepper, and green bell pepper.

  6. Season with salt and pepper and stir.

  7. Boil until potatoes and carrots soften, around 12 minutes. Adjust seasoning as needed and serve hot.
