Warm Roasted Potato & Avocado Salad

  • 1 1/2 lbs. all-purpose potatoes, cut into 1-inch chunks
  • 2 medium red and/or orange bell peppers, cut into chunks
  • 2 Tbsp. olive oil
  • 2 Knorr® Garlic MiniCube(s), crumbled
  • 2 Tbsp. lime juice
  • 2 medium avocados, peeled and diced
  • 2 Tbsp. chopped fresh cilantro

  • 1 Preheat oven to 450°F.
  • 2 Toss first 3 ingredients in a large roasting pan or broiler pan without the rack and bake for 40 minutes or until potatoes are tender, stirring occasionally. Stir in lime juice and Knorr® Garlic MiniCubes. Just before serving, stir in avocados and cilantro. Serve warm or at room temperature.
