Stuffed Zucchini

  • 4 large zucchini *, sliced lengthwise
  • 2 Tbsp. vegetable oil
  • 1 3/4 cups water
  • 1 package Knorr® Fiesta Sides™ - Mexican Rice
  • 1 cup shredded Monterey Jack cheese
  • 1 Preheat over to 375°.
  • 2 Scoop out pulp of zucchini and chop. Heat oil in medium saucepan over medium heat and cook zucchini pulp, stirring occasionally, until tender, about 2 minutes. Stir in water and Knorr® Fiesta Sides™ - Mexican Rice. Bring to a boil. Reduce heat to low and simmer covered 7 minutes or until rice is tender.
  • 3 Arrange zucchini on baking sheet. Evenly fill with rice mixture. Sprinkle with cheese. Bake 25 minutes or until zucchini are tender.
