Savory Mushroom Rice Pilaf

  • 1 Tbsp. vegetable oil
  • 2 cups sliced mushrooms
  • 1 small onion, finely chopped
  • 1 tsp. fresh thyme or 1/4 tsp. dried thyme leaves
  • 1 cup uncooked regular rice
  • 2 cups water
  • 1 tub Knorr® Homestyle Stock - Beef
  • 1 Heat oil in 2-quart saucepan over medium-high heat and cook mushrooms, onion and thyme, stirring occasionally, until vegetables are tender, about 4 minutes.
  • 2 Stir in rice and cook, stirring constantly, until golden, about 1 minute.
  • 3 Stir in water and Knorr® Homestyle Stock - Beef. Bring to a boil over high heat, stirring until Stock is melted. Reduce heat to low and simmer covered until rice is tender, about 20 minutes.
