Rice with Shrimp & Pineapple

  • 8 Tbsp. olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 medium red bell pepper, chopped
  • 1/2 tsp. salt
  • 1 cup fresh pineapple chunks or canned
  • 1 cup uncooked long grain rice
  • 2 1/4 cups water
  • 1 Knorr® Shrimp flavor Bouillon Cube(s), crumbled
  • 1 packet Knorr® Sazon with Coriander and Annatto
  • 1 lb. uncooked shrimp, peeled and deveined
  • Hot pepper sauce to taste
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro

  • 1 In 4-quart saucepan, heat olive oil over medium heat and cook onion, garlic, red pepper and salt, stirring occasionally, 3 minutes. Stir in pineapple, rice, water, Knorr® Shrimp flavor Bouillon Cube, and Knorr® Sazon with Coriander and Annatto. Bring to a boil over high heat. Reduce heat to low and simmer covered 20 minutes. Stir in shrimp. Simmer covered an additional 5 minutes or until shrimp turn pink. Garnish with green onions and cilantro.
