Garlicky Chicken & Spinach Pasta

  • 1 Tbsp. olive oil
  • 4 boneless, skinless chicken thighs
  • 2 cloves garlic
  • 1 package Knorr Selects™ Spinach Florentine with Penne Pasta
  • Ground black pepper to taste
  • 2 Tbsp. grated Parmesan cheese or other hard cheese
  • 1 HEAT oil in large nonstick saucepan and cook chicken, turning once, until browned, about 5 minutes.
  • 2 POUR in just enough water to cover chicken. Add garlic and bring to a boil. Reduce heat and simmer, covered, until chicken is thoroughly cooked, about 25 minutes. Remove chicken and garlic and set aside
  • 3 POUR liquid left in saucepan into liquid measuring cup. Return 2 cups to saucepan (reserve any remaining for another use.*) and bring to a boil. Add Knorr Selects™ Spinach Florentine with Penne Pasta and return to a boil. Cook over medium-high heat and boil, covered, 10 minutes, stirring frequently.
  • 4 SHRED chicken using 2 forks. Finely chop garlic and toss together. Stir into Pasta and season with pepper. Serve sprinkled with Parmesan.
