Easy Weeknight Chicken Paella

  • 1 large green bell pepper
  • 1 medium red onion
  • 1 medium tomato
  • 1 lb. boneless, skinless chicken thighs
  • 2 Tbsp. olive oil
  • 1 pkg Knorr® Ready to Heat Spanish Style Rice
  • 1 Thinly slice pepper and onion and chop tomato. Cut chicken into bite sized pieces. Heat olive oil in large nonstick skillet over medium-high heat and cook chicken 5 minutes, stirring frequently, until thoroughly cooked. Remove, set aside. <BR>
  • 2 Add pepper and onion to skillet and cook, stirring occasionally, 3 minutes. Stir in tomato, reserved chicken and Knorr® Ready to Heat Spanish Style Rice. Cook 1 minute or until well blended and heated through.<BR>
