Balsamic Beef & Broccoli Rabe

  • 1 lb. boneless sirloin steak, cut into strips
  • 2 Tbsp. oil, divided
  • 1/4 cup chopped roasted red peppers
  • 2 cloves garlic, minced
  • 8 ounces broccoli rabe *, trimmed and chopped, (5 cups)
  • 1 cup chopped red onion
  • 2 Tbsp. balsamic vinegar
  • 2 cups water
  • 1 package Knorr® Rice Sides™ - Beef flavor
  • 1 SEASON steak, if desired, with salt and pepper. Heat 1 Tbsp. oil in large nonstick skillet over medium-high heat and cook steak, roasted peppers and garlic, stirring occasionally , until steak is cooked to desired doneness. Remove and set aside.
  • 2 HEAT remaining oil in same skillet over medium-high heat and cook broccoli rabe and red onion, stirring occasionally, until just wilted and tender, about 2 minutes. Add vinegar and cook 1 minute. Remove and set aside.
  • 3 ADD water and Knorr® Rice Sides™ - Beef flavor to same skillet and bring to a boil. Reduce heat and simmer covered 7 minutes or until rice is tender. Stir in steak mixture and broccoli rabe mixture. Serve, if desired, with grated Parmesan cheese; now it's delicious. Dig in!
