Vegetable Stew

Stew is always a comforting dish. This fully spiced version of the classic includes garlic, paprika and sugar. Serve with rice or couscous.

  • 1 tablespoon vegetable oil
  • 1 onion finely chopped
  • 1 teaspoon demerara sugar
  • 3 garlic cloves crushed
  • 23 grams Knorr Mixed Herbs Flavour Pot
  • 2 tomatoes chopped
  • 2 courgettes sliced
  • 2 potatoes peeled and cubed
  • 3 carrots peeled and sliced
  • 1 Knorr Vegetable Stock Pot
  • 2 teaspoons tomato puree
  • 600 ml water
  • 1 tinned chickpeas drained and rinsed
  • 2 tablespoons chopped mint (optional)
  • 2 tablespoon yogurt (optional)

  • 1 Heat oil in a pan and fry onion until soft but not brown. Add the sugar and fry for about 5 minutes or until the onions start to turn golden brown.
  • 2 Stir in the garlic and Knorr Paprika Flavour Pot and cook for 30 seconds.
  • 3 Add all the vegetables, Knorr Vegetable Stock Pot, tomato puree and the water and allow to simmer on a low heat for 20 minutes or until the vegetables are cooked.
  • 4 Stir in the chickpeas and simmer for a further 5 minutes.
  • 5 Before serving garnish with mint and yoghurt if desired.
