  • 25 grams Flora Buttery
  • 1 onion chopped
  • 1 carrot chopped
  • 1 celery stick chopped
  • 10 grams Knorr Vegetable Stock Cube dissolved in
  • 500 ml boiling water
  • 400 grams tinned chopped tomatoes
  • 100 grams tomatoes
  • 2 tbsp tomato puree
  • 1 bay leaf
  • black pepper
  • 100 millilitres Elmlea Single
  • basil leaves to garnish
  • 1 Heat the Flora in a large pan and sauté the onion, carrot and celery until softened, about 5 minutes.
  • 2 Add the Knorr stock, canned and fresh tomatoes, tomato puree and the bayleaf and simmer for 20 minutes.
  • 3 Liquidize and then return to pan. Add pepper to taste and Elmlea (reserving a tablespoon) and reheat gently.
  • 4 Serve garnished with basil leaves and a swirl of Elmlea.
