Chilli Con Carne

This great Chilli Con Carne recipe is fantastic for entertaining friends and a great hit with the family. Full of flavour with a big kick of heat from the chilli, this recipe is made deeply flavourful by the Knorr Stock and aromatic fresh coriander.

  • 500 g lean beef mince
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 1 hot chilli, finely chopped
  • 28 grams Knorr Rich Beef Stock Pot dissolved in
  • 300 ml boiling water
  • 1 tsp ground coriander
  • 2 tsp ground cumin
  • 1 glass red wine (optional)
  • 2- 3 tbsp tomato paste
  • 400 g can chopped tomatoes
  • 400 g can red kidney beans, drained
  • 15 grams coarsely chopped fresh coriander leaves

  • 1 Heat a large non-stick frying pan. Add the mince and cook on medium heat for 6-8 minutes, stirring well until the meat starts to brown. Add the onions and cook on medium heat for a further 4-5 minutes until the onions soften but do not brown.
  • 2 Add the garlic, chilli, coriander and cumin. Cook for 1-2 minutes then add the wine. Cook for 2 minutes, stirring well to release the meat flavours from the bottom of the pan. Add the Knorr Rich Beef Stock, tomato puree and chopped tomatoes.
  • 3 Bring to the boil, reduce heat, then cover and leave to cook slowly for about 1 hour. Check frequently to make sure it is just simmering gently. Remove the lid for the last 20 minutes.
  • 4 Add the kidney beans and heat through for 8-10 minutes. Serve sprinkled with coriander leaves.
