  • 1 kg pork belly, scored
  • 2 tbsp olive oil
  • 1 Knorr Pork Stock Cube
  • 300 ml apple juice or apple cider
  • 100 ml boiling water
  • 100 ml Elmlea Double
  • Fresh sage or thyme

  • 1 Preheat the oven to 180°C, 160°C fan, Gas Mark 4.
  • 2 Heat half the oil in a large frying pan and add the pork, skin side down. Cook on high heat for 6-8 minutes to render some of the fat. Turn over and cook a further couple of minutes. Place in a large roasting tin, fat side up. Crumble half of the Knorr Pork Stock Cube into the remaining oil and brush into the fat then place in the oven.
  • 3 Roast for 1 ½ hours until the pork is cooked through and the crackling golden brown and crisp. Remove from the oven and rest in a warm place.
  • 4 For the sauce, heat the apple juice or cider, water and the remaining half of Knorr Pork Stock Cube and bring to the boil. Boil until reduced by half. Pour in the Elmlea and reheat.
  • 5 Cut the rested pork into slices and spoon over the sauce. Garni
