  • 100 g quinoa red or white
  • 250 ml water
  • 1 Knorr vegetable stock cube
  • 400 g cucumber cut in cubes of 1 cm
  • 250 g cherry tomatoes halved
  • 1 avocado chopped in cut into small pieces
  • 1 red onion cut in half rings
  • 50 g fat free feta cut into cubes
  • 30 g parsley finely chopped
  • 1 tablespoon olive oil
  • splash red wine vinegar

  • 1 Put a medium sized pan on a high heat with water and Knorr vegetable stock cube.
  • 2 Bring it to a boil and cook the quinoa according to cooking instructions of the package.
  • 3 Drain and rinse with cold water.
  • 4 Mix the quinoa with the exciting ingredients and season it with the olive oil,red wine vinegar salt and pepper.
