  • 500 g beef rump steak
  • 1 onion chopped
  • 2 garlic cloves chopped
  • 300 g fresh mixed vegetables
  • 300 g new potatoes
  • 400 g tinned chopped tomatoes
  • 1 beef stock pot dissolved in 200 ml boiling water
  • 1 teaspoon dried rosemary

  • 1 Heat 1 tbsp oil and fry the steaks for 5 mins, turning once. Leave on a plate, cover and keep warm.
  • 2 Heat another tbsp oil and sauté the onion and garlic until soft but not browned. Cut vegetables into large pieces and add with remaining ingredients, cover and simmer for 10-15 mins until potatoes are tender.
  • 3 Cut beef into large chunks and return to pan. Heat through for 2 mins.
