Heat a tablespoon of olive oil in a large saucepan over medium-high heat.

Fry the beef, in 2 batches for 5 minutes or until browned all over, transfer to a heatproof bowl.

Heat another tablespoon oil in the same pan over medium heat and add the onion and fry until brown.

Add the garlic and cook for 1 minute or until fragrant.

Add the chopped tomatoes, Knorr Rich Beef Stock Pots and 250ml water.

Put the beef back into the pan.

Bring to a boil so the stock pot can dissolve. Reduce heat to low.

Cook, covered, for 2 hours or until beef is tender.

Add gnocchi, courgette, cherry tomatoes and cook covered for about 7 minutes or until the gnocchi is soft and tender (add a little water if you lost too much liquid during the cooking process).
