  • 2 tbsp olive oil
  • 2 onions, chopped
  • 3 garlic cloves, finely sliced
  • 600 g beef casserole steak, cut into large chunks
  • 2 tbsp flour
  • 175 ml red wine
  • 28 grams Knorr Rich Beef Stock Pot dissolved in
  • 600 ml boiling water
  • 1 tbsp tomato puree
  • 3 medium tomatoes, chopped
  • 2 large potatoes, cut into chunks
  • 2 large carrots, cut into large chunks
  • 1 bay leaf
  • 2 sprigs rosemary
  • A pinch of ground cumin
  • 1 star anise

  • 1 Pre-heat the oven to 150˚C, 130˚C fan, Gas mark 2.
  • 2 Heat half of the oil in a large casserole dish on the stove top. Add the onions and cook on medium heat for 4-6 minutes until onions start to soften but do not brown. Add the garlic and cook for further 1-2 minutes on medium heat to soften. Transfer onions and garlic to a plate and set aside.
  • 3 Heat the remaining oil in the same casserole dish. Mix the beef with the flour and add in batches, cooking until evenly browned on all sides, about 8-10 minutes. Resist the temptation to turn the meat over too early as this lowers the temperature of the pan and the meat will not brown. Return the onions and garlic to the dish.
  • 4 Add the red wine, bring to the boil and simmer uncovered for 4-5 minutes on medium heat. Add the Knorr Beef Stock, tomato puree, chopped tomatoes, potatoes and carrots. Bring to the boil then remove from the heat.
  • 5 Add bay leaf, rosemary, cumin and star anise. Cover and cook in the oven for 1 hour 50 minutes to 2 hours, until the meat is tender and the stew has thickened.
