  • 700 grams sweet potatoes and potatoes mixed peeled cut into quarters
  • 25 grams Flora Pro.Activ Buttery
  • 25 grams flour
  • 10 grams Knorr Fish Stock Cube dissolved in
  • 425 ml semi-skimmed milk
  • 2 cloves garlic crushed
  • 50 ml Elmlea Double
  • 1 tablespoon chopped fresh flat-leaf parsley
  • ground black pepper to taste
  • 500 grams skinless white fish & salmon fillets skinned cubed
  • 100 grams cooked peeled prawns
  • 1 leek blanched thinly sliced
  • 3 tablespoons semi-skimmed milk

  • 1 Preheat oven to 220°C, 200°C fan, Gas Mark 7.
  • 2 Boil potatoes in a large pan for about 15 minutes or until cooked.
  • 3 Meanwhile, melt the Flora Buttery in a large saucepan. Add the flour and whisk to mix thoroughly. Gradually add in the milk stock, whisking between each addition. Add the garlic, bring to the boil, stirring constantly, then reduce to a simmer and cook for 2-3 minutes until the sauce starts to thicken. Stir in the Elmlea, parsley and season with the black pepper.
  • 4 Arrange fish, prawns and leeks in a greased ovenproof dish and pour over sauce.
  • 5 Drain potatoes and mash until there are no lumps. Beat in milk and season with some extra black pepper if desired. Spoon over fish and smooth the top with a fork. Bake for 30-40 minutes until cooked through.
