  • 3 tablespoon rapeseed oil or sunflower oil
  • 1 red onion finely chopped
  • 1 carrot cut into 5 mm cubes
  • handful of chopped fresh coriander
  • 2 garlic cloves finely chopped
  • 1 red pepper cut into 5 mm cubes
  • 1 tablespoon chipotle paste in adobo sauce
  • 200 g black turtle beans cooked
  • 2 tablespoon tomato purée
  • 500 g fresh chopped tomatoes
  • 2 tablespoon Knorr concentrated vegetable stock
  • 1/2 teaspoon dried oregano
  • 100 ml water

  • 1 Heat the oil in a large frying pan or casserole dish. Peel the onion and carrot, and separate the coriander stalks from the leaves (setting the leaves aside for later). Use a mini-chopper or food processor to chop the onion, carrot and coriander stalks then add to the pan
  • 2 Add the garlic, onion, red bell pepper, carrot and chipotle to the pan and stir fry for a few minutes.
  • 3 Add the rinsed black beans, tomato purée and chopped tomatoes.
  • 4 Then season well with the Knorr concentrated vegetable stock, oregano, water, salt and black pepper.
  • 5 Stir, then cover with a lid and turn up to a high heat.
  • 6 Cook for 8-10 minutes, stirring frequently. Taste and adjust seasoning if necessary.
  • 7 Stir the coriander through the chili before serving.
