Chinese-style Cod Fillet

  • 4 cod fillets
  • 10 grams Knorr Fish Stock Cube
  • 1 tbsp olive oil
  • 4 tbsp mirin seasoning
  • 1 tbsp, reduced salt soy sauce
  • A thumb sized piece of fresh root ginger, peeled and finely chopped
  • 1 small red chilli, finely chopped
  • zest and juice of 1 lime
  • 4 spring onions
  • 2 tbsp olive oil, plus extra for oiling foil

  • 1 Pre-heat the oven to 220°C, 200°C fan, Gas mark 7.
  • 2 Crumble the Knorr Fish cube and mix with the olive oil to form a paste. Stir in the mirin, soy, ginger, chilli and the zest and juice of the lime.
  • 3 Cut 2 spring onions into fine, long shreds, set aside. Cut the remaining spring onions into thin slices.
  • 4 Take a very large sheet of aluminium foil and oil one side thoroughly with oil. Scatter the spring onions slices over the base of the oiled foil. Top with the cod then drizzle the Knorr fish sauce mixture over the fish.
  • 5 Bring the foil up and over the cod fillet, carefully folding the foil edges over to form a sealed parcel.
  • 6 Place the cod on a baking tray and bake for 15–20 minutes.
  • 7 To serve the cod, carefully open up the parcel, releasing the steam. Place the cod on a serving dish and drizzle the sauce over. Top with the shreds of spring onions and serve immediately.
