1 free range chicken 800 - 1.5 kg (rinse & pat dry)
2 stalks of celery (cut chunks)
2 whole carrot (cut chunks)
1 yellow onion (peel, cut half)
2 whole bulb garlic (slice horizontally into half)
10 cherry tomatoes
10 button mushroom (half it)
1 broccoli (cut into foret)
10 mini potato (cut into half)
1 tbsp sea salt
pepper
1 tsp cajun powder
2 tbsp olive oil
1 Marinate chicken with Haochi and pepper, rub hao chi powder inside & outside of the chicken.. Pepper it and place the chicken to dry in the fridge for 3hrs.. (This will results in crispy skin after grilled)
2 Toss all ingredients (except cherry tomatoes and broccoli) together with seasoning and lay evenly onto heat proof tray. Place chicken on top of ingredients, breast side up. Bake 180 degress preheated oven for 45 minutes or until chicken is cooked through.
