  • 100 ml milk
  • 300 ml Canola oil

  • 1 Preheat salt in a cast iron pan in the oven.
  • 2 Once salt is hot, cover prawns and cook in the oven for 10-15 minutes until cooked. Reserve for plating.
  • 3 For the emulsion, combine all ingredients in a vessel and using a stick blender on high, blend until emulsified. Transfer to a serving vessel and pair with prawns.
