Sweet Potato and Kangkong Soup for a Cold Night

Are you tired of making the same old chicken sopas to warm you up when the weather cools? Or maybe you’re looking for a way to get your family to eat healthy veggies? Then this healthy sweet potato soup is what you might just need in your repertoire.

Kamote or sweet potatoes have long been a fan favorite health food. This versatile root crop is rich in vitamins and nutrients, thus making sweet potato benefits rank high on a nutritionist’s chart. Additionally, sweet potato calories are also relatively low. For example, a medium-sized baked kamote only has 110 calories compared to a regular potato’s 161 calories.

But this isn’t all there is to this kamote and spinach soup. Kangkong is inexpensive and provides fiber, magnesium, lutein, thiamin, folate, and B-12. The addition of chicken fillet also gives the dish lean proteins, vitamins A, B, C, D, calcium, iron, and zinc.

All you need are a few simple ingredients to get a pot going. Let’s get started!

Ingredients for Sweet Potato and Kangkong Recipe

  • 1 pc medium red onion, sliced
  • ¼ kg chicken breast fillet, cut into bite-sized cubes
  • 1 cup kamote (orange), cut into big cubes
  • 1 cup gabi, cut into cubes
  • 4 cups water
  • 2 pcs Knorr Chicken Cubes
  • 1-2 bundles kangkong, leaves separated from the stem

How to Cook Sweet Potato Kangkong Soup
