  • ½ Onion, sliced
  • Oil
  • 1 clove garlic, chopped
  • 2 chillies, halved
  • KNORR chicken cubes, crumbled
  • Medium curry
  • Ground cumin
  • Ground coriander
  • Paprika
  • Peri peri spice
  • Basmati rice
  • Firm white fish, cut in cubes
  • Seafood mix
  • Water
  • Prawns
  • 2 tomatoes, chopped
  • Fresh coriander, chopped
  • 1 In a large pan, fry the onion and garlic until lightly browned.
  • 2 Add the chillies, and all the spices and fry for 2 minutes.
  • 3 Add the cut-up fish and the seafood mix, stir well to coat with spices, then add the rice and water.
  • 4 Bring to the boil, then turn down the heat and simmer for 20 minutes, stirring occasionally.
  • 5 Add the chopped tomato and prawns and simmer for 3 – 5 minutes.
  • 6 Stir in the chopped coriander and serve.
