Chicken & Mushroom Soup

This quick chicken soup is the perfect midweek meal. Feel free to swap the spinach for other nutritious greens, like kale or finely sliced cabbage leaves.

  • 120 g field mushroom, washed and diced
  • 2 tablespoons olive oil
  • 1 small red onion, peeled and finely sliced
  • 10 grams Knorr Chicken Stock Cube
  • 150 g skinless chicken breast fillet, cut into 1.5cm cubes
  • 80 g spinach, washed and roughly chopped
  • 2 spring onions, washed and finely sliced
  • 160 grams crusty bread, to serve
