Great stock for leftover chicken

Left over chicken makes a fantastic broth. Place the chicken carcass in a large casserole dish and lightly brush with some olive oil, place in the oven at 180C fan, and cook for 15 minutes.

Meanwhile, chop some carrots, onions and any other vegetables you have to hand such as potatoes and leeks. Place in a large frying pan with a dash of olive oil and cook on medium heat for 4-5 mins. Cut a garlic bulb in half horizontally. Place upside down in the frying pan and cook for further 2 mins.

Remove the casserole dish from the oven and place on a hob. Add the sautéed vegetables and fill with boiling water until the water fully covers the chicken. Bring to the boil and remove any scum from the surface. Crumble in 2 Knorr Stock Cubes and simmer gently, uncovered for 2 hours. After 1 hour add 2 bay leaves, 5 springs of parsley, 3 sprigs of thyme and 6 black peppercorns slightly crushed.

Try tasting the broth, remembering to cool the liquid a little on the spoon first. Add more herbs and pepper to taste. Simmer for a further 30 mins. Remove from the heat, carefully remove the carcass and discard, then pass the liquid through a sieve.

This tasty broth can be used as a base for a wide variety of soups and sauces. As a great idea, try finely chopping up a pack of peeled uncooked prawns. Place in a large mixing bowl and add a pack of pork mince and half a packet of chives, finely chopped. Add some crushed black pepper, mix really well by hand then roll into balls about the size of a golf ball. Gently fry the meatballs until cooked through.

Add these to the hot broth and finish with some freshly chopped spring onions and a handful of spinach leaves to make a delicious oriental style meal. 

Another super-easy way of making great chicken broth is to place the carcass straight into a large saucepan, add some chopped carrots, garlic and other vegetables you may have to hand and fill with water until the chicken is covered. Crumble in 2 Knorr Stock Cubes. Bring to the boil then simmer gently for 3-4hrs. Adding some bay leaves, parsley, thyme and slightly crushed peppercorns after 1 hr. Delicious!
