- 1 Tbsp. (15 mL) vegetable oil
- 2 large tomatoes, seeded and chopped
- 1 small onion, chopped
- 1 package Knorr Selects™ Rustic Mexican Rice & Beans
- 4 large eggs
- 1 Tbsp. (15 mL) chopped fresh cilantro

HEAT oil in large nonstick skillet over medium-high heat and cook tomato and onion, stirring occasionally, until soft, about 4 minutes.
PREPARE Knorr Selects™ Rustic Mexican Rice & Beans in same skillet according to package directions, cracking eggs gently on top of rice during last 5 minutes of cook time.
SPRINKLE with cilantro. Serve, if desired, with crumbled queso fresco, chopped avocado, lime wedges and hot sauce.
