Fiesta Lime Chicken & Rice

Chicken breasts are sautéed in chili and lime juice then served over Mexican rice. Garnish with cheese, tomato or corn for added flavour and colour.

  • 4 boneless, skinless chicken breast halves (about 1-1/4 lbs/ 625 g)
  • 3/4 tsp. (3 mL) chili powder
  • 1 Tbsp. (15 mL) oil
  • 1 Tbsp. (15 mL) lime juice
  • 1 package Knorr® Sidekicks® Mexican Rice Side Dish, prepared according to package directions
  • Shredded cheddar cheese
  • Chopped tomato
  • Chopped onion
  • Crumbled tortilla chips

  • 1 SPRINKLE chicken with chili powder. Heat oil in large nonstick skillet over medium-high heat and cook chicken, turning once, until thoroughly cooked, about 6 minutes. Stir in lime juice.
  • 2 SPOON Rice onto serving platter, then top with chicken and any drippings.
  • 3 TOP with your favourite taco toppings such as shredded cheddar cheese, chopped tomato and onion and crumbled tortilla chips; now it's delicious. Dig in!
