  • 2 1/4 cups (550 mL) Knorr® Vegetable Broth
  • 1 cup (250 mL) uncooked whole grain brown rice
  • 1 can (320 g.) mandarin oranges, drained
  • 2 cups (500 mL) arugula
  • 1 cup (250 mL) chick peas
  • 1/4 cup (50 mL) finely chopped red onion
  • 2 Tbsp. (30 mL) olive oil
  • 1 Tbsp. (15 mL) balsamic vinegar
  • 1/4 cup (50 mL) sliced almonds, toasted

  • 1 Bring Knorr® Vegetable Broth to a boil in medium saucepan. Stir in rice and return to a boil. Reduce heat to medium-low and simmer covered 25 minutes or until rice is tender. Fluff with fork; cool.*
  • 2 Combine cooked rice with remaining ingredients in serving bowl. Serve at room temperature or chill, if desired.
