Ingredients

  • 4 salmon fillets (about 5 oz. ea.)
  • 2 tsp. olive oil
  • 4 Tbsp. I Can't Believe It's Not Butter!® Spread
  • 1/4 cup red onion
  • 1 medium tomato, chopped
  • 1 cup milk
  • 1 package Knorr® Bearnaise sauce mix
  • 2 tsp. small capers

Directions

  • Show your salmon a little love...
  • Preheat oven to 425°. Arrange salmon in shallow roasting pan. Season, if desired. Brush each fillet with olive oil. Bake 20 minutes or until fish flakes easily.
  • Meanwhile, melt 2 tablespoons Spread in a large nonstick skillet and cook onion, stirring occasionally, 2 minutes. Add tomato and cook 1 minute. Stir in milk, Knorr® Bearnaise sauce mix and remaining spread and bring to a boil. Cook, stirring constantly, until sauce thickens, about 1 minute. Stir in capers and pour sauce over salmon.
