Ingredients

  • 1/4 cup olive oil
  • 1 package Knorr® Pesto sauce mix
  • 10 cups sliced fresh vegetables*

Directions

  • Preheat oven to 450°.
  • Combine all ingredients in 13 x 9-inch baking or roasting pan until evenly coated. Bake uncovered, 20 minutes or until vegetables are tender, stirring once.
  • SUBSTITUTION: Lightly spray pan with no-stick cooking spray and replace oil with 2 Tbsp. water. *Use any combination of the following, sliced: zucchini, yellow squash, red, green or yellow bell peppers, carrots, celery, onion or mushrooms.
