Ingredients

  • 2 cups water
  • 1 package Knorr® Spring Vegetable recipe mix
  • 1 cup couscous (about 6 oz.)
  • 2 cups finely chopped cooked turkey [or chicken]
  • 3 Tbsp. extra-virgin olive oil
  • 3 Tbsp. lemon juice
  • 1/4 cup chopped fresh cilantro [or parsley]

Directions

  • Bring water and Knorr® Spring Vegetable recipe mix to a boil in medium saucepan. Stir in couscous. Remove from heat; cover and let stand 10 minutes.
  • Fluff couscous with a fork; stir in remaining ingredients. Garnish, if desired, with pine nuts and sliced green olives.
