Ingredients

  • 2 Tbsp. olive oil
  • 1 tsp. dried rosemary leaves
  • 1 tsp. dried thyme leaves
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 roasting chicken (about 3-1/2 to 4 lbs.)
  • 1 package Knorr® Rice Sides™ - Rice Medley

Directions

  • Preheat oven to 375°.
  • Combine oil, rosemary, thyme, salt and pepper in small bowl. Loosen skin from chicken and spread 1/2 of the herb mixture under skin. Spread remaining mixture over skin.
  • Arrange chicken breast side up in roasting pan on a rack. Roast until chicken is thoroughly cooked, about 1 hour . Slice chicken and serve with Knorr® Rice Sides™ - Rice Medley.
  • FINISHING TOUCHES: Serve with steamed green beans, warm dinner rolls and lemon sherbet for dessert.
