Ingredients

  • 2 Tbsp. butter
  • 1/2 medium onion, chopped
  • 1 carrot, grated
  • 1 tsp. dry mustard
  • 2 Tbsp. all-purpose flour
  • 1 tub Knorr® Homestyle Stock - Chicken
  • 4 cups water
  • 2 packages (10 oz. ea.) frozen broccoli florets, thawed
  • 1 cup half & half
  • 2 cups shredded cheddar cheese

Directions

  • Melt butter in large saucepot over medium heat and cook onion, carrot and mustard, stirring occasionally, until vegetables are tender, about 3 minutes. Sprinkle in flour and cook, stirring frequently, 1 minute. Slowly stir in Knorr® Homestyle Stock - Chicken blended with water until dissolved. Stir in broccoli and bring to a boil over high heat. Reduce heat to low and simmer uncovered, stirring occasionally, until broccoli is tender, about 20 minutes.
  • Remove 1/2 cup liquid from saucepot and stir into half and half. Slowly pour back into saucepot, stirring constantly. Remove from heat. Puree soup with hand-held or immersion blender until smooth. Stir in cheddar cheese until melted, heating if needed.
