Ingredients

  • 3 Tbsp. oil or unsalted butter
  • 1 (3-in.) cinnamon stick
  • 3 cardamon pods
  • 1 medium bay leaf
  • 1 large onion, finely chopped
  • 1 1/2 lbs. boneless, skinless chicken thighs, cut into bite-size pieces
  • 1 tsp. turmeric
  • 1 Tbsp. garam masala
  • 1 tub Knorr® Homestyle Stock - Chicken
  • 3 cups water
  • 1 1/2 cups basmati rice
  • 1/3 cup raisins
  • Garnish with toasted, slivered almonds and chopped fresh cilantro.

Directions

  • Heat oil in large heavy stockpot over medium heat and cook cinnamon with cardamon, stirring occasionaly, until fragrant and swollen, about 2 mintues. Stir in onion and cook, stirring occasionally, until tender, about 2 minutes.
  • Season chicken, if desired, with salt and pepper. Stir into stockpot and cook, stirring occasionally, until browned, about 3 minutes. Stir in turmeric and garam masala and cook 30 seconds. Stir in Knorr® Homestyle Stock - Chicken until melted. Add water and bring to a boil.
  • Stir in rice and raisins and return to a boil. Reduce heat to low and simmer covered until rice is tender, about 20 minutes. Garnish with almonds and cilantro.
