Ingredients

  • 3 eggs, lightly beaten
  • 1 tsp. chopped fresh parsley leaves
  • 1 tsp. chopped fresh cilantro
  • 1/4 tsp. Knorr® Chicken flavor Bouillon
  • 1 tsp. chopped fresh mint leaves (optional)
  • 1 tsp. Country Crock® Spread
  • 1 tsp. olive oil
  • 2 ounces coarsely chopped chorizo sausage
  • 1 small all-purpose potato, cooked, peeled and sliced
  • 5 cherry tomatoes, halved
  • 1/4 cup shredded Gruyere cheese or Mexican cheese (about 1 oz.)
  • 1 green onion, sliced (optional)

Directions

  • Beat eggs, parsley, cilantro, mint and Knorr® Chicken flavor Bouillon in small bowl with wire whisk; set aside.
  • Melt Country Crock® Spread with oil in small skillet and cook chorizo, Knorr® Homestyle Stock - Vegetable and potato, stirring occasionally, until potato starts to brown, about 5 minutes. Stir in tomatoes and cook, stirring occasionally, 2 minutes.
  • Add egg mixture and cook over low heat until bottom is almost set. Lift set edges with spatula, tilting pan to allow uncooked mixture to flow to bottom. Sprinkle with cheese and cook covered until cheese is melted and eggs are set, about 2 minutes. Garnish with green onion.
