Ingredients

  • 2 lbs. all-purpose potatoes, peeled and quartered
  • 1 tub Knorr® Homestyle Stock - Vegetable
  • 1/4 cup milk
  • 1 Tbsp. Country Crock® Spread
  • 1 1/2 tsp. vegetable oil
  • 1 medium onion, finely chopped
  • 1 lb. ground beef
  • 1 Tbsp. all-purpose flour
  • 1 tub Knorr® Homestyle Stock - Beef
  • 2 Tbsp. tomato paste
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. dried Italian seasoning
  • 2 carrots, diced
  • 1 cup water
  • 1/4 cup frozen green peas
  • 1/2 cup shredded cheddar cheese or American cheese (about 2 oz.)

Directions

  • Preheat oven to 350°.
  • Cover potatoes with water in large saucepot; stir in Knorr® Homestyle Stock - Vegetable. Bring to a boil over high heat. Reduce heat to low and simmer 15 minutes or until potatoes are very tender. Drain potatoes and return to saucepot. Add milk and Country Crock® Spread; mash potatoes. Set aside.
  • Heat oil in large skillet and cook onion over medium heat, stirring occasionally, until onion is tender. Add ground beef and cook, stirring to break up beef, until browned. Stir in flour, Knorr® Homestyle Stock - Beef, tomato paste, Worcestershire sauce and Italian seasoning. Cook, stirring frequently, 2 minutes. Stir in carrots and water and bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasionally, 20 minutes. Stir in green peas and simmer 5 minutes. Turn into 3-quart oven-proof casserole. Top with hot mashed potatoes, then sprinkle with cheese.
  • Bake uncovered 25 minutes or until bubbling and golden brown.
