Ingredients

  • 1 Tbsp. oil
  • 2 medium onions, chopped
  • 2 carrots, diced
  • 2 stalks celery, sliced
  • 2 cloves garlic, finely chopped
  • 3 Tbsp. all-purpose flour
  • 1 cup dry white wine or water
  • 1 can (14 oz.) diced tomatoes , undrained
  • 1 tub Knorr® Homestyle Stock - Chicken
  • 1 cup sliced mushrooms
  • 1/8 tsp. fresh thyme
  • 4 lbs. bone-in chicken parts (legs, thighs and/or breast)

Directions

  • Preheat oven to 350°.
  • Heat oil in large saucepot over medium heat and cook onions, carrots, celery and garlic, stirring occasionally, until almost tender, about 5 minutes. Add flour and cook, stirring constantly, 1 minute. Gradually stir in wine and tomatoes. Bring to a boil over high heat. Stir in Knorr® Homestyle Stock - Chicken, mushrooms and thyme; return to a boil. Reduce heat and simmer, stirring occasionally, 4 minutes. Add chicken to 3-quart casserole, then add vegetable mixture.
  • Cover and bake 50 minutes or until chicken is thoroughly cooked. Serve, if desired, over hot rice or noodles.
