Chicken Cutlet Scampi Pasta with Peas & Mushrooms

- 1 1/4 lbs. chicken breast cutlets
- 2 Tbsp. I Can't Believe It's Not Butter!® Spread, divided
- 1 package (10 oz.) mushrooms, sliced
- 2 1/4 cups water
- 1 package Knorr® Italian Sides™ - Scampi Flavor
- 1 cup frozen green peas, thawed
- Season chicken, if desired with salt and ground black pepper. Melt 1 tablespoon Spread in 12-inch nonstick skillet over medium-high heat and cook chicken, turning once, 8 minutes or until chicken is thoroughly cooked. Remove chicken and set aside.
- Melt remaining 1 tablespoon Spread in same skillet and cook mushrooms, stirring occasionally, 4 minutes or until golden.
- Add water and bring to a boil. Add Knorr® Italian Sides™ - Scampi Flavor and return to a boil. Reduce heat to medium and cook uncovered, stirring occasionally, 5 minutes. Stir in peas and cook 2 minutes or until pasta is tender. Spoon onto serving platter, then top with chicken. Serve, if desired, with lemon wedges.
